Chicken casserole

For 4 of us:
3 chicken fillets
onion
garlic
chicken stock
tinned tomatoes
flour
veg
Chicken with spring onions and mushrooms

4 chicken fillets
mushrooms
spring onions
flour
chicken stock
optional glass white wine
optional garlic
Serve with veg.
Sausage Casserole

2 - 4 sausages each
onion
diced veg - potatoes, carrots etc
beef stock
salt and pepper
tin of tomatoes
tinned tomatoes ( optional)
Fry onion until soft
Fry sausages until browned
Add onion sausages and veg to casserole dish (or slow cooker)
Cover with stock and baked beans
Add tinned tomatoes if desired
Cover and cook for 1 - 2 hours at 180ºC
You can omit the veg from the casserole and serve the dish with the veg if desired.
Cottage Pie

For 4 of us
1 - 1¼ lb of minced beef
onion finely chopped
flour
beef stock tomato puree (optional)
Worcester Sauce (optional)
salt and pepper
mashed potato or as an alternative boiled, sliced potato
Fry onion until soft
add mince and cook until browned
add 1 - 2 tablespoons of flour to coat the meat
add salt and pepper to taste
Cover with beef stock and a splash of Worcester sauce and a tablespoon of tomato puree if desired
simmer for 20-30 mins.
When thickened add to an oven proof dish and allow to cool.
Once cooled add a layer of mash or slices of boiled potato
Cook for 20 - 30 mins until browned at 180ºC
Serve with lots of veg and gravy
