Chicken casserole

For 4 of us:Cuisinart CSC650MU 6.5 Litre Slow Cooker from
3 chicken fillets
chicken stock
tinned tomatoes

  • Fry onion and garlic until soft
  • Fry chicken for 5 – 10 mins
  • Add flour to coat chicken
  • Add veg (potatoes, carrots, peas etc) and enough chicken stock to cover. You can also add a tin on tomatoes if you wish
  • Cover and cook in the oven for 2-3 hours at 160ºC or add to slow cooker
  • Chicken with spring onions and mushrooms

    For 4 us

    4 chicken fillets
    spring onions
    chicken stock
    optional glass white wine
    optional garlic

  • Place chicken in cling film and flatten using a rolling pin until about 5mm thick
  • Coat in flour and fry in a little oil.
  • Remove chicken once browned and in to same pan fry spring onions and mushrooms (and garlic if you wish) until softened
  • Return chicken to pan and add chicken stock (and wine)
  • Simmer for about 20 – 30 mins until sauce thickens.
  • Serve with veg.

    Sausage Casserole

    For 4 of us:Slow Cooker by Sara Lewis

    2 – 4 sausages each
    diced veg – potatoes, carrots etc
    beef stock
    salt and pepper
    tin of tomatoes
    tinned tomatoes ( optional)

    Fry onion until soft
    Fry sausages until browned
    Add onion sausages and veg to casserole dish (or slow cooker)
    Cover with stock and baked beans
    Add tinned tomatoes if desired
    Cover and cook for 1 – 2 hours at 180ºC
    You can omit the veg from the casserole and serve the dish with the veg if desired.
